Ingredients

  • 1 cup green lentils
  • 1.5 cups fine bulgur wheat
  • 3 tablespoons vegetable oil
  • 1 onion
  • 1 tablespoon tomato paste
  • 1 dessert spoon red pepper paste
  • 1 dessert spoon salt
  • 1 teaspoon cumin
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 bunch parsley
  • 1/2 bunch green onions
  • 4 cups water (for cooking lentils)
  • For serving: lettuce leaves and lemon wedges

Instructions

  1. Cook green lentils in 4 cups of water until very soft
  2. Transfer hot lentils with their cooking water to a large bowl
  3. Add fine bulgur to the hot lentils and mix well
  4. Cover tightly with plastic wrap and let rest for 10-15 minutes to let bulgur soften
  5. Finely chop the onion
  6. Heat vegetable oil in a pan
  7. Sauté chopped onions until lightly golden
  8. Add tomato and pepper paste to the onions, stir well
  9. Add one small cup of hot water to create a sauce
  10. Add the sauce to the softened bulgur and lentil mixture
  11. Knead well to combine
  12. Add all spices, salt, finely chopped green onions and parsley
  13. Continue kneading until well mixed
  14. Shape the mixture into small, oval-shaped patties by squeezing in your palm
  15. Arrange on a serving plate
  16. Serve with lettuce leaves and lemon wedges
