Ingredients

  • 250g beef, cubed
  • 3-4 tablespoons vegetable oil
  • 1 onion
  • 2 green peppers
  • 1 red pepper
  • 1 tablespoon tomato paste
  • 1 tablespoon red pepper paste
  • 2 cups chickpeas
  • 1 teaspoon red pepper powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Water for cooking

Instructions

  1. Prepare chickpeas (ahead):
  2. Soak chickpeas in hot water for 3-4 hours or overnight
  3. Cook in pressure cooker for 15 minutes or until tender
  4. Cook the meat:
  5. Place beef in pot and cover with water (2 fingers above)
  6. Boil for 20-25 minutes
  7. Remove foam that forms on top
  8. Strain meat and reserve cooking liquid
  9. Prepare vegetables:
  10. Heat oil in separate pot
  11. Sauté chopped onions until translucent (1-2 minutes)
  12. Add green and red peppers, sauté briefly
  13. Add tomato and pepper paste, cook 1-2 minutes
