Ingredients
- 2 cups rice
- 3 cups chicken broth or hot water (or a mix of both)
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- 1 cup cooked chickpeas
- Salt to taste
Instructions
- Wash the rice thoroughly until water runs clear
- Soak the washed rice in warm, salted water for 15-20 minutes
- Drain the rice well after soaking
- In a pot, combine vegetable oil and butter, heat until butter melts completely
- Add the drained rice to the melted butter-oil mixture
- Sauté the rice for a few minutes until slightly toasted
- Add boiling chicken broth or hot water (or mixture of both)
- Season with salt to taste
- Add the cooked chickpeas (you can add them either now or with the rice in step 5)
- Cover the pot and cook on high heat until it starts boiling
- Once boiling, reduce heat to low and cook until the liquid is absorbed and small holes appear on the surface
- When rice is tender and has absorbed all the liquid, remove from heat
- Cover the pot with paper towels, then put the lid on
- Let it rest for 10 minutes before serving
