Pan-Seared Beef Stew (Saç Kavurma)
Saç kavurma is a traditional Turkish meat dish cooked on a special concave metal pan called 'saç'. The key to perfect saç kavurma is cooking the meat slowly on low heat, allowing it to release and reabsorb its juices for maximum tenderness. While traditionally made on a copper saç, you can use a regular pan with a lid - the important thing is to create a steamy environment for tender meat. This protein-rich dish is perfect for growing children, and the colorful vegetables make it visually appealing. Using a copper pan enhances the cooking process as it distributes heat evenly, but any heavy-bottomed pan will work well.
